Cold brew is having a moment — what's the right way to do it for tea?
Use double the leaf you'd use for hot brewing. Put leaves in a jar, fill with cold filtered water (1g per 15ml), seal, refrigerate for 6–12 hours. Strain and drink. Cold extraction is gentler than hot — you get sweetness and aromatics without the tannins, so cold brew is almost impossible to over-steep. Works beautifully with greens, whites, and lightly oxidized oolongs. Heavier teas (pu-erh, dark roasted oolong) are better hot.
