Japanese Tea

Japanese tea diverges from Chinese green tea at the very first step: the leaves are steamed, not pan-fired, which preserves a bright green colour and oceanic umami character. We list the classic five — Gyokuro, Matcha, Sencha, Hojicha and Genmaicha.
