Green Tea

Chinese green tea is the fresh, un-oxidised cup — delicate, vegetal, grassy-sweet, meant to be drunk young. The most famous variety is Longjing (龙井), the pan-fired flat-leaf Dragon Well from the hills around West Lake in Hangzhou, but Biluochun (碧螺春) from Suzhou, Anji Baicha and Tai Ping Hou Kui all have fiercely loyal followings. We buy our green tea in spring from long-standing family producers.
