Tie Guan Yin (鐵觀音, 'Iron Goddess of Mercy') is one of China's ten most celebrated teas — a partially oxidised oolong from Anxi County in Fujian Province whose name comes from a legend: a farmer, guided by the bodhisattva Guanyin in a dream, found a struggling tea plant near her iron statue and cultivated it into what became the most famous oolong in China. Whether legend or history, the variety he propagated has been grown in Anxi for three centuries. Most Tie Guan Yin sold in Europe today is the green (qing xiang) style — lightly oxidised, fresh and floral, brewed quickly for a delicate cup. This is the traditional roasted style (nong xiang, 濃香): leaves oxidised longer and then slowly charcoal-roasted to develop depth and warmth. Roasting drives off moisture, caramelises natural sugars, and produces a more complex, full-bodied tea that ages well and holds its character across many steeps. In the cup: golden-amber liquor, clear and warm. The aroma opens with orchid and toasted grain. On the palate: a buttery, rounded body; roasted chestnut in the middle; a clean mineral note in the finish that lingers long after the cup is empty. - 1. Place 5 g of rolled Tie Guan Yin pearls in a 100 ml gaiwan or clay pot.
- 2. Rinse once with 95°C water — the balls need one steep to start opening.
- 3. First steep 30 s; reduce by 5 s as leaves unfurl, then build again.
- 4. Good for 6–8 infusions. Western: 3 g per 250 ml, 90°C, 2–3 min.
