What water temperature should I use for each tea type?

I keep seeing conflicting advice on water temperature — what's the actual rule of thumb?

Quick reference: green tea 75–80°C, white tea 80–85°C, oolong 90–95°C, black/red tea 95–100°C, pu-erh 95–100°C, matcha 70–80°C. Lower temperatures preserve delicate aromatics and amino acids (the sweet/umami notes); higher temperatures extract robust tannins and depth. If your green tea tastes harsh, your water is too hot. If your pu-erh tastes thin, your water is too cool.
