Aged Pu-Erh
An aged pu-erh cake is a time capsule. With ten, fifteen or twenty-five years of dry storage, the sharp bitterness of a young sheng smooths into silky camphor, aged wood, dried jujube and honey; a good aged shu develops a quiet depth no freshly-pressed ripe can match.
