Yixing (宜兴) is a town in Jiangsu, China, with a unique purple clay (zisha) that's porous, slightly mineral, and seasons over time. Each pot absorbs the flavor of the tea brewed in it, gradually deepening and softening successive infusions — like a cast-iron pan for tea. You dedicate one pot per tea family (one for sheng pu-erh, one for shou, one for yancha) so flavors don't mix. They aren't essential, but for someone drinking the same tea family regularly, a well-seasoned yixing makes a real difference.
