What temperature should I brew oolong tea at?

I've been getting inconsistent results with my oolongs — sometimes they're great, sometimes bitter.

For most oolongs, 95°C (just off the boil) is the sweet spot. Light green oolongs like Tie Guan Yin can go slightly cooler at 90°C, while roasted Wuyi rock teas and Phoenix Dan Cong handle full boiling water beautifully. The more important variable is steep time: gongfu style, start with 15-20 seconds and add 5 seconds each infusion.
