Kihin (貴賓) Premium Gyokuro, 50g tin — first-flush shade-grown gyokuro from Hibiki-an's top Uji plot, hand-plucked in early May from Saemidori cultivar trees shaded under reed mats for a full 20 days before harvest. The extended shading builds up theanine and chlorophyll while suppressing catechin bitterness, producing the signature thick oceanic umami that makes top-grade gyokuro taste almost like a clear dashi broth. Brewed low and slow — 50°C, 2 minutes — to draw out the sweetness without awakening the tannins. A connoisseur's Japanese green tea. Brewing Guide
Western: 3g per 250ml glass or porcelain cup. Cool water to 80–85°C (NEVER boiling — it'll destroy the vegetal sweetness). Steep 2–3 min, then top up the same leaves 2–3 times.
