Sheng Pu-Erh

Sheng (生) means raw — the original form of pu-erh tea, sun-dried and stone-pressed without any ripening shortcut. A young sheng cake is tannic, bittersweet and alive with floral aromatics; give it five, ten or twenty years of dry storage and it unfolds into something closer to aged Bordeaux than to tea.
